A lot of the fighting moves used in the movies were taken from Samurai techniques and Escrima (Filipino stick-fighting) and fencing.

Try Google or ask.com for sword re-enactment societies. There might be a local one, and I hear they have a lot of fun.
Plus they sometimes get invited to join in battle scenes on movie sets; because they know the moves & have no problem with the costumes or moving naturally under the weight of armour.

The sword fighting moves are indeed taken from styles like escrima (stick fighting) and kendo (japanese samurai sword fighting). The double ended lightsaber fights are generally quarterstaff/bo-staff techniques amd the two-lightsaber techniques are Florentine fencing styles.
Many martial arts schools can be found to teach the first three. A fencing academy will teach the latter, if it’s one that includes it in addition to the more conventional foil, epee and saber.

Good question. I lightsaber fight with my friends all the time (we use those $7 plastic lightsabers found at Wal-Mart, etc.), and I could possibly beifit from this question. Right now, I fight where I block with two sabers, then switch the right lightsaber so it’s upside-down, then attack with that one. Pretty effective IMO, but I guess it takes skill to master whatever works for you. Anyway, that’s all I have to say, thanks if you actually cared to read this!
